Ingredients
1 3/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2 cups granulated sugar
2 large eggs
1 cup milk (or buttermilk)
1/2 cup vegetable oil
2 tsp vanilla extract
1 cup boiling water or hot coffee
Optional Frosting:
1/2 cup unsalted butter, softened
2 1/2 cups powdered sugar
1/3 cup unsweetened cocoa powder
1/4 cup milk or heavy cream
1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round pans or one 9×13-inch pan.
- In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, salt, and sugar.
- Add eggs, milk, oil, and vanilla. Mix until smooth.
- Stir in boiling water or hot coffee (batter will be thin).
- Pour into prepared pan(s) and bake for 30–35 minutes, until a toothpick inserted in the center comes out clean.
- Cool 10 minutes in the pan, then transfer to a wire rack to cool completely.
- If frosting, beat butter until creamy. Add cocoa powder, powdered sugar, vanilla, and milk/cream until fluffy and spreadable. Frost cooled cake.
Notes
Add chocolate chips or nuts for extra texture.
Buttermilk makes the cake richer and tangier.
Dutch-process cocoa gives deeper chocolate flavor.
Add espresso powder or cinnamon to enhance flavor.
Can be baked as cupcakes or bundt cake—adjust baking time accordingly.
