Description

Chicken Marsala is a classic Italian-American dish featuring tender chicken cutlets simmered in a savory and slightly sweet Marsala wine and mushroom sauce. It’s an elegant yet easy dinner that’s perfect for any occasion.


Ingredients

2 boneless, skinless chicken breasts

1/2 cup all-purpose flour (for dredging)

2 tbsp olive oil

3 tbsp butter (divided)

8 oz cremini or white mushrooms, sliced

2 cloves garlic, minced

3/4 cup Marsala wine (dry or sweet)

3/4 cup chicken broth

1/4 cup heavy cream (optional)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)


Instructions

  1. Slice the chicken breasts in half lengthwise to create cutlets and season with salt and pepper.
  2. Dredge the chicken in flour, shaking off the excess.
  3. Heat olive oil and 1 tablespoon of butter in a large skillet over medium heat. Cook the chicken until golden brown on both sides and cooked through. Remove and set aside.
  4. Add another tablespoon of butter to the skillet if needed, then sauté the mushrooms until browned.
  5. Add the minced garlic and cook for 1 more minute.
  6. Pour in the Marsala wine, scraping up any browned bits from the pan.
  7. Add the chicken broth and let the sauce simmer and reduce slightly. Stir in the heavy cream if using.
  8. Return the chicken to the skillet and simmer for a few minutes until heated through and the sauce thickens.
  9. Garnish with chopped parsley and serve hot.

Notes

Use boneless chicken thighs for a juicier variation.

Skip the cream for a dairy-free version.

Use gluten-free flour or cornstarch to make it gluten-free.

Add shallots for extra flavor depth.

A splash of balsamic vinegar can cut the sweetness if desired.
