Description

A quick and cozy sandwich layered with seasoned shredded chicken, creamy avocado, and melty cheddar cheese between buttery toasted bread—ready in 25 minutes for lunch or dinner.


Ingredients

4 slices bread (sourdough, whole wheat, or ciabatta)

2 cooked chicken breasts, shredded

1 avocado, sliced

1 cup shredded cheddar cheese

2 tbsp butter

1/4 tsp garlic powder

1/4 tsp onion powder

Salt and pepper, to taste


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix shredded chicken with garlic powder, onion powder, salt, and pepper.
  3. Butter one side of each bread slice.
  4. Place two slices, buttered side down, on a baking sheet.
  5. Top with seasoned chicken, avocado slices, and shredded cheddar.
  6. Cover with remaining bread slices, buttered side up.
  7. Bake 10–15 minutes until cheese is melted and bread is toasted. Let rest briefly before serving.
  8. Alternatively, grill in a skillet over medium heat for 3–4 minutes per side until golden and melty.

Notes

Use rotisserie chicken for a quicker prep.

Swap cheddar with mozzarella, provolone, or pepper jack.

Add bacon, tomato, or jalapeños for extra flavor.

Smear Dijon mustard or pesto inside for a flavor boost.

To store: wrap in foil and refrigerate up to 2 days. Reheat in oven or toaster oven for best results.
