Description

A refreshing summer salad made with ripe peaches, sweet blueberries, crisp greens, tangy feta, and crunchy nuts, all tossed in a zesty lemon vinaigrette. Light, colorful, and perfect for warm days.


Ingredients

2 fresh peaches, sliced

1 cup fresh blueberries

6 cups mixed greens (arugula, spinach, or spring mix)

1/2 cup feta cheese, crumbled

1/4 red onion, thinly sliced

1/4 cup toasted almonds or pecans

Dressing:

1/4 cup olive oil

2 tablespoons fresh lemon juice

1 tablespoon honey or maple syrup

1 teaspoon Dijon mustard

Salt and pepper to taste


Instructions

  1. Whisk together lemon juice, olive oil, honey or maple syrup, Dijon mustard, salt, and pepper to prepare the dressing.
  2. In a large bowl, combine mixed greens, sliced peaches, blueberries, red onion, and toasted nuts.
  3. Top with crumbled feta cheese.
  4. Drizzle dressing over the salad just before serving and toss gently to combine.

Notes

Swap feta with goat cheese or burrata for extra creaminess.

Use nectarines or strawberries if peaches aren’t available.

Add grilled chicken, shrimp, tofu, or chickpeas to make it a complete meal.

Walnuts or sunflower seeds work as nut alternatives.

Best eaten fresh—store dressing separately if making ahead.
