Blackberry Cobbler is a rustic dessert featuring juicy blackberries baked under a golden, buttery crust. Simple, cozy, and adaptable, it’s perfect for showcasing fresh or frozen berries any time of year.
Ingredients
4 cups fresh or frozen blackberries
3/4 cup granulated sugar (divided)
1 tbsp lemon juice
1 cup all-purpose flour
2 tsp baking powder
1/4 tsp salt
1 cup milk
1/2 cup unsalted butter (melted)
Optional: 1/2 tsp cinnamon or 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a baking dish.
- Toss blackberries with 1/4 cup sugar and lemon juice. Set aside to release juices.
- In a separate bowl, whisk together flour, remaining 1/2 cup sugar, baking powder, and salt.
- Stir in milk and melted butter until just combined into a smooth batter.
- Pour the batter into the prepared dish, then spoon the blackberries and their juices evenly over the top. Do not stir.
- Bake for 40–45 minutes, until the crust is golden brown and the filling is bubbling.
- Let cool slightly before serving. Enjoy warm with vanilla ice cream or whipped cream if desired.
Notes
Add raspberries or blueberries for a berry mix.
For thicker filling, toss berries with 1 tsp cornstarch before baking.
Sprinkle turbinado sugar or oats on top for extra crunch.
Use a biscuit-style topping by dropping spoonfuls of dough instead of a pourable batter.
This cobbler is just as good cold the next day.
