Description

Blackberry Cobbler is a rustic dessert featuring juicy blackberries baked under a golden, buttery crust. Simple, cozy, and adaptable, it’s perfect for showcasing fresh or frozen berries any time of year.

Ingredients

4 cups fresh or frozen blackberries

3/4 cup granulated sugar (divided)

1 tbsp lemon juice

1 cup all-purpose flour

2 tsp baking powder

1/4 tsp salt

1 cup milk

1/2 cup unsalted butter (melted)

Optional: 1/2 tsp cinnamon or 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a baking dish.
  2. Toss blackberries with 1/4 cup sugar and lemon juice. Set aside to release juices.
  3. In a separate bowl, whisk together flour, remaining 1/2 cup sugar, baking powder, and salt.
  4. Stir in milk and melted butter until just combined into a smooth batter.
  5. Pour the batter into the prepared dish, then spoon the blackberries and their juices evenly over the top. Do not stir.
  6. Bake for 40–45 minutes, until the crust is golden brown and the filling is bubbling.
  7. Let cool slightly before serving. Enjoy warm with vanilla ice cream or whipped cream if desired.

Notes

Add raspberries or blueberries for a berry mix.

For thicker filling, toss berries with 1 tsp cornstarch before baking.

Sprinkle turbinado sugar or oats on top for extra crunch.

Use a biscuit-style topping by dropping spoonfuls of dough instead of a pourable batter.

This cobbler is just as good cold the next day.
