Ingredients
2 lbs lean ground beef
1 large onion, diced
1 green bell pepper, diced
3 garlic cloves, minced
1 cup beef broth
1 (15 oz) can tomato sauce
1 (15 oz) can diced tomatoes with juice
1 (15 oz) can pinto beans, drained
1 (15 oz) can kidney beans, drained
3 tablespoons chili powder
1 teaspoon dried oregano
2 teaspoons ground cumin
1 teaspoon ground coriander
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper (adjust to taste)
Instructions
- In a large pot, brown the ground beef over medium-high heat, breaking it apart as it cooks. Drain excess fat.
- Add onion, green bell pepper, and garlic. Sauté until vegetables are softened, about 5 minutes.
- Stir in beef broth, tomato sauce, diced tomatoes, pinto beans, kidney beans, chili powder, oregano, cumin, coriander, salt, pepper, and cayenne.
- Bring to a boil, then reduce heat to low. Simmer uncovered for 30 minutes, stirring occasionally.
- Taste and adjust seasoning if needed. Serve hot with your favorite toppings like cheese, sour cream, jalapeños, or green onions.
Notes
Swap ground beef for turkey or chicken for a lighter version.
