Description

Beef Tenderloin Roast is a luxurious yet easy-to-make main dish perfect for holidays and special occasions. With its buttery texture and rich flavor, this roast is simply seasoned and roasted to perfection for a showstopping centerpiece.


Ingredients

1 (2.5 to 3 lb) beef tenderloin roast, trimmed and tied

2 tbsp olive oil or melted butter

2 tsp kosher salt

1 tsp freshly ground black pepper

3 cloves garlic, minced

1 tbsp fresh rosemary or thyme leaves (optional)

Kitchen twine, if needed


Instructions

  1. Take the beef out of the refrigerator at least 30 minutes before cooking to bring to room temperature.
  2. Preheat oven to 450°F (230°C).
  3. Pat the tenderloin dry with paper towels. Rub with olive oil or melted butter.
  4. Season generously with salt, pepper, and minced garlic. Press on herbs if using.
  5. Place roast on a rack in a shallow roasting pan or on a baking sheet with a wire rack.
  6. Roast for 25–30 minutes for medium-rare, or until internal temperature reaches 130°F (54°C).
  7. Remove from oven and let rest for 15–20 minutes, tented with foil, before slicing.

Notes

Use a meat thermometer to avoid overcooking—internal temp will rise slightly as it rests.

For extra flavor, try a mustard-herb crust or baste with garlic butter.

Roast vegetables alongside the meat for a one-pan meal.

Let the roast come to room temperature before cooking for even roasting.
