Description
Apple Cider Cheesecake is a creamy, spiced dessert with a graham cracker crust, apple cider-infused filling, and a sweet apple cider glaze—perfect for fall and holiday gatherings.
Ingredients
For the crust:
1 1/2 cups graham cracker crumbs
2 tbsp granulated sugar
1/2 tsp ground cinnamon
6 tbsp unsalted butter, melted
For the filling:
3 (8 oz) packages cream cheese, softened
1/2 cup granulated sugar
1/4 cup brown sugar
3 large eggs
3/4 cup apple cider (reduced to 1/3 cup)
1/2 cup sour cream
1 tsp vanilla extract
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1 tbsp all-purpose flour
For the apple cider glaze (optional):
1/2 cup apple cider
2 tbsp brown sugar
1 tsp cornstarch
1/4 tsp ground cinnamon
Instructions
- Preheat oven to 325°F (160°C) and grease a 9-inch springform pan.
- Mix graham cracker crumbs, sugar, cinnamon, and melted butter. Press into pan and bake for 8–10 minutes. Let cool.
- Reduce apple cider by simmering until it reaches about 1/3 cup. Set aside to cool.
- Beat cream cheese until smooth, then add sugars and beat until creamy.
- Add eggs one at a time, then stir in reduced cider, sour cream, vanilla, cinnamon, nutmeg, and flour until smooth.
- Pour filling over crust and smooth top.
- Bake in water bath for 55–65 minutes, until edges are set and center jiggles slightly.
- Turn off oven, crack door, and let cheesecake cool inside for 1 hour.
- Chill in refrigerator for 6 hours or overnight.
- For glaze, simmer cider and sugar, whisk in cornstarch slurry, add cinnamon, and let cool before spooning over cheesecake.
Notes
Swirl caramel sauce into filling for added flavor.
Use gluten-free graham crackers for a gluten-free version.
Top with sautéed apples for a rustic look.
Add chopped apples to filling for texture.
Bake in muffin tins for mini cheesecakes.
